Chewy Oat Fudge Bars

I’m sharing a dessert recipe today, and it is one of my favorites!

Did y’all ever try the oat fudge bars that Starbucks carried way back when? They were DIVINE and soooo good paired with coffee. I couldn’t believe it when Starbucks discontinued them! Of course, I immediately went on the hunt for a copycat recipe and found several, however, none of them were quite right. So I changed things a little here and there until I came up with my own version (and the closest copycat, I think) of the official Starbucks oat fudge bar!

Oat Fudge Bar Recipe


Ingredients:

Oat mixture:

  • 1 cup granulated sugar

  • 1 cup brown sugar

  • 1 cup butter, melted and cooled

  • 2 large eggs

  • 2 cups all-purpose flour

  • 1 tsp baking soda

  • 2 1/2 - 3 cups old fashioned oats

Fudge:

  • 1 can (300 mL) sweetened condensed milk

  • 2 cups chocolate chips

  • 1/2 cup butter

Instructions

  1. Preheat oven to 350 degrees.

  2. In a large bowl, cream together sugars and butter, then add in the egg.

  3. In a separate bowl, mix together the flour, oats and baking soda.

  4. Slowly add the dry mixture to the wet mixture, mixing thoroughly.

  5. Grease a 9x13 baking dish (a bit of butter on a paper towel works great for this part).

  6. Press about 2/3 of the oat mixture into the baking dish.

  7. In a saucepan over low heat, melt the butter for the fudge. Add in sweetened condensed milk and chocolate chips, stirring until smooth.

  8. Remove from heat and pour the fudge into the baking dish. Spread evenly.

  9. Sprinkle the remaining oat mixture on top of the fudge (larger chunks are better).

  10. Bake at 350 degrees for 30-45 minutes (a glass dish will bake faster than ceramic), until the top is slightly browned.

  11. Remove from oven and let cool before serving.
